Visit to Emilia-Romagna Region: Parmesan time!

Being lactose sensitive in the Emilia-Romagna region is like ascending Mount Everest in crocs: it just isn't gonna work out. This past Saturday, my school took a field trip to a parmesan factory in the beautiful Tuscan countryside. I met cows, taste-tested until I dropped, and learned that people quite literally take out loans to get their hands on a wheel of this stuff. After my fourth helping of aged cheese cubes, I began to understand why.
